Recipe by Gahan House Nova Centre
INGREDIENTS
- ½ CHOPPED WHITE ONION
- 1 TBSP CANOLA OIL
- ½ JALAPENO PEPPER
- 4 GARLIC CLOVES, MINCED
- ½ TSP CUMIN
- 250 ML LIGHT BEER
- ½ CUP CILANTRO, CHOPPED
- 1 LB LARGE, PEELED SHRIMP
- 1 LIME ZESTED AND JUICED
INSTRUCTIONS
- Heat oil in skillet on medium heat.
- Cook onion, jalapeno pepper, garlic until tender
- Add cumin, season to taste with salt and pepper
- Add beer, cilantro and cook until reduced by half
- Add shrimp and cook until shrimp are pink and tender
- Add lime juice and zest
- Serve over steamed white rice and garnish with lime wedges, cilantro and avocado
